The pictures are tantalizing, and the recipe sounds so interesting. Never thought of making shakshuka with plantains. Do they need to be ripe or firm? I've never cooked with plantains before, but I'd like to give them a try, assuming I could find them around here.

Thank you Ruth. They really are y. The photos here are from Africana cookbook and taken by Tara Fisher who photographs for Jamie Oliver. I love her style. Vibrant yet natural. ❤️ Ripe plantains will be best although you could use either ripe hello or unripe green plantains. I started a plantain series last year. I’ll revisit it and share again so you can follow along.
