Every day of my life, I travel. I travel through food, with tins of malted chocolate Milo from Ghana to blooming Jasmine tea from China. I travel through trinkets, artefacts and crockery in my home, things that preserve the memories of places I miss and even those I am yet to visit, like the Andalusian azure blue bowl my mother-in-law gave to me.
While in Morocco, the creamy scented delightful North African pancakes are on my mind, from the moment I wake. And now these have become a festive favourite I intend to enjoy as a tradition every year. Typically served with butter, honey and sometimes with Amlou - an almond and honey butter.
I devoured these pancakes on Christmas morning and will do the same to usher in the new year. Gazing upon the holes erupting from the batter just poured into my cast iron frying pan. Each popping until the top loses its froth, ready to be scooped up, but never flipped, drizzled with an enchanting orange blossom and honey butter syrup. The syrup is inspired by some of my favourite Moroccan breakfast flavours and the scent of orange blossom oil usually wafting whether in a palatial riad, in a coastal or desert retreat or a Kasbah overlooking the Atlas mountains. A scent I now burn night and day, at home. Flavours and scents that comfort and brighten my day, transporting me to some of the most memorable days of my life travelling across Morocco. This is how I’d love to begin the New Year. Hopeful, happy and very well-fed.

Listen to the whispers of the desert
After meeting some of our Berber friends and enjoying a thrilling 4x4 drive across the Agafay desert, this was a special and quiet moment, experiencing just a snippet of a day in the life of a camel herder in the desert. I love watching the desert almost as much as I love watching water crash against the shores, be it in Essaouira, in our coastal retreat in Ghana or at home in seaside Sussex, England. The pleasure of breakfast, with the sweetest oranges, spiced coffee or cocoa and these delightful pancakes make mornings so memorable in Morocco. I am rather excited to share these memories with you as we feast and cook our way across the country and beyond, exploring hidden gems at our upcoming Cookery Retreat in 2024.
One of my proudest moments in 2023, was embarking on a dream of taking you with me on some of the unique food and travel adventures I write about. A dream I had even before I got a book deal, one I had hoped to share with you in 2020. A dream delayed by the pandemic but not shattered. In March 2023, we embarked on our inaugural retreat in Ghana, a resounding success, with guests from around the world, also returning for our upcoming retreat in Morocco. There is no greater sign that I should have never been afraid to take this great leap. See us in action.
