Perhaps the marinade of all marinades. With a good amount of fat, acid, moisture and flavour. Quite the multipurpose ingredient, doing a lot more work than we often realise. Beautiful with citrus, as it holds the zest and juices together. Accentuated with spices, salt and offering a good balance for chillies, as it tames the fire. The perfect marinade for gently tenderising meat, and just as wonderful on vegetables. Certainly in my fragrant and smoky, crispy and moist roast chicken with chickpeas. This you have got to try!
