Sunshine on your plates
If like me you love an explosion of flavours, you are going to enjoy the recipes I have for you. Although I adore the sunshine, I do find the change in season oddly comforting. In the UK we finally and officially say goodbye to summer and I find myself yearning for warmer spices, sumptuous stews, and more recipes I can stir slowly. As we make the transition to autumn I insist on enjoying joyous meals that bring sunshine to my plate. The two recipes I have shared below are full of flavour and promise, with the opportunity to use up leftover herbs and vegetables while making it easier than ever to reduce waste at home. Fragrant Green Rice with Tomatoes, Spinach & Herbs
In partnership with Tropical Sun
When asked by Tropical Sun to create a recipe to celebrate National Rice Week, which was last week (forgive my tardiness as I do not follow food trends as much as I follow seasons), I reached for a bouquet of herbs that I typically have in abundance, both fresh and frozen, and concocted this fragrant and enchanting Green Rice with a stir-fry of sweet peppers, juicy cherry tomatoes, and spinach. This is a great recipe for using up the inevitable leftovers of parsley and coriander with a fragrant punch from makrut lime leaves and warmth from the chilli and curry spices.

Cookery Classes Are Back!
Delighted to share that my in-person cookery classes are back, starting in Brighton and Hove in the UK. I teach contemporary African recipes in collaboration with Brighton & Hove Food Partnership, a social enterprise that does amazing work supporting the community by providing more access to good food and nutritional education. I look forward to cooking together again.
