Experience Africa like never before
“Imagine plucking fragrant and beautifully ripened mangoes, sinking your teeth into the sweetened flesh and saving the harvest for recipes such as mango piri piri or a cooling tropical salad with hibiscus syrup. Listen to the soothing ocean waves crashing on the seashore in harmony with the sound of crackling fires, as you roast a fresh catch basted in apricot glaze, perhaps with a paste of makrut lime leaves and chillies, or the enthralling perfume of vanilla beans and rum. Feel the comfort of stirring slowly as you mother a pot of luscious greens, or a sumptuous stew. Savour the spellbinding flavours of spiced tea, coffee and the pure decadence of delicious dark chocolate.” Africana, p.6
With these memories and dreams tugging at my heart strings, I set out to bring the magic of African cooking to you however I could. In 2020, I started planning immersive cooking holidays for us to experience together. Traversing the bustling city exploring vibrant markets With fresh produce and colourful crafts, cooking and feasting together while getting to know the locals. The pandemic struck and while stuck at home and with this great sense of frustration, I put my head down and began writing Africana.
Two years later, we have this treasure of a book that is warming so many hearts. But, the desire to spread my wings with my community never waned. And so in March this year, when I could finally travel, I escaped to Ghana not only to be revived by that warm African sun and sumptuous food, but to plan the very best cooking holiday for us. I will show you my favourite spots, from the vibrant markets in Accra to the botanical gardens in Aburi hills towering over the city with the most fascinating plants. We will enjoy the bustling city and our 5 star hotel before escaping to our exquisite and 100% solar powered coastal hide-away, with an impressive pool and gym, where you will wake up to breath-taking views of the ocean, while birds sing all day and all night. On our holiday you can enjoy much relaxation, group cookery classes with organic produce and a fresh catch of fish minutes away from the local fishermen. We will visit Ghana’s most riveting cultural and historical sites including the UNESCO World Heritage Cape Coast Castle. Food will be fresh, flavourful and abundant, and you will be enriched with the vibrant culture and warmth of the people. I am so excited for this new adventure with you.
