After a gruelling year (2 years to be honest, or 6 years if we really want to be accurate) of creating something quite spectacular, that is causing me to near combustion from keeping this secret! Despite an intense amount of cooking being done, I have barely had time to cook calmly at home not to mention keeping in touch with you via our newsletter, and I have missed you all!

Curried Beef & Potato Pie with Tesco
It can be difficult to come up with exciting meals every single day of the week while keeping on top of our busy lives. Despite having a career that involves writing recipes and cooking, sometimes I too ask myself that most difficult question,
“What can I cook today?!” or “What can I eat today?!”
And so when the UK's biggest supermarket asked me to create a recipe with a good dose of African magic to inspire cooks to try something different and exciting with puff pastry, I instantly thought of a Curried Beef & Potato Pie inspired by the fragrant Nigerian meat pies I enjoyed growing up. This time I gave it a quick revamp using a block of puff pastry and carving it in the style of a French Pithivier. This is a gorgeous pie that you can enjoy as a meal with a side salad or shared with friends and family in the garden or at a picnic. It would be wonderful for Thanksgiving, which is just around the corner.
I am thankful for this pie. Filming this recipe was very special as that day sometime in August, was my first day in London and back at work in over a year since lockdown. I was so anxious, and yet found it so easy and calmly baking this pie at midnight just before the pie’s big day on set! See calming pie video here.
Milli Taylor who joined me in the kitchen prepared an aromatic Cheese and Chutney Parcel that could prepare for a lovely dinner party entrée.
In response to our need for ideas for what to cook, especially with store cupboard ingredients and hero ingredients that can make cooking a breeze, Tesco has created a lovely recipe search tool to help us find ideas for a variety of recipes.
Today, I’ll be tucking into this heart-warming pie once again, perhaps with a few tablespoons of passata added to the mince this time. Hmmm…what a delicious idea! Now all that's left is for you to try these recipes at home.
