In my previous letter I shared a ‘secret’, and the dangerously nutty recipe for Suya Roasted Cauliflower, one of the most popular recipes in my cookbook. Now, I’ve got a brand-new recipe for you, another nutty one from my chest of recipes. Inspired by an eggplant & spiced peanut butter snack served at weddings, especially amongst the Ibo tribe and beyond in Nigeria, and also the groundnut stew of West Africa, also known as Mafé (Maafe) in Senegal and Sauce d’arachide in Benin, Cote D’ivoire and in many more countries. For someone who can’t eat nuts, I sure have been obsessed with indulging my nutty sensibilities. Could it be that because I can’t have it, I want it more?

This creamy rich nut-roast may not have made it into my first cookbook, as one of the many recipes I took out to save for later, but now, it has made its way to you! I wonder, are you ready for book number two?! More thoughts on that soon, as I will need your help…
